Here lately I have been super swamped and sometimes forget to take care of myself. I often skip breakfast only to find that I’m drained of all my energy before noon. I used to think that people who got up in time to make breakfast were some sort of alien creature with magic powers ha, ha! Nowadays there are more ways to create a healthy quick breakfast when you have little time and I’m going to show you one that has changed my morning routine and life!
Avocado toast comes in many forms, but in this case, it will be dressed up with a poached egg, and sprouts which are rich in protein and vitamins. Something I could also use more of in my life. After I started this breakfast routine, I felt much more satisfied and found myself more energetic giving me that push towards lunch. I’ve also noticed that my metabolism has kicked it up a notch. It’s crazy how one little meal can affect your body and the rest of your day. So without further ado here is my super quick recipe to a delicious breakfast!
- 1/8 TBSP VINEGAR
- 1/3 CUP WATER
- 1 SLICE OF TOAST
- 1/2 AVOCADO
- 1 EGG
- PARMESAN SHAVINGS
- ALFALFA SPROUTS
- GARLIC SALT FLAKES
- BLACK SESAME SEEDS
WHILE BREAD IS TOASTING, CRACK EGG OPEN, AND PLACE INTO A SMALL RAMEKIN. ADD WATER AND VINEGAR AND MICROWAVE FOR 40 SECONDS. YOU CAN ADD 10 MORE SECONDS IF YOU PREFER A LESS RUNNY EGG.
PLACE TOAST ON BREAD AND MASH AVOCADO INTO A SPREAD ON TOP. ADD POACHED EGG AND SPRINKLE GARLIC SALT, PEPPER, SESAME SEEDS AND PARMESAN TO YOUR LIKING. SPRINKLE SPROUTS ON TOP AND ENJOY!
