A BRUNCH RECIPE TO RAVE ABOUT


 The newest edition to the brunch menu is avocado toast.  It’s become all the rage on Pinterest, Instagram, and Snapchats.  Avocado toast comes in many variations, today I am going to share one of my favorite ways to make it!

Ingredients
  1. 1/2 AVOCADO
  2. 1 WHOLE WHEAT ENGLISH MUFFIN
  3. 2 EGGS, FRIED OR POACHED
  4. 2 STRIPS OF BACON, COOKED
  5. 3 GRAPE TOMATOES
  6. SHAVED PARMESAN CHEESE
  7. SALT + PEPPER
Instructions
  1. START BY COOKING THE BACON FIRST. I LIKE TO CUT MY PIECES OF BACON IN HALF FOR THIS RECIPE SO THAT THEY FIT THE ENGLISH MUFFIN.
  2. NEXT SPLIT AND TOAST THE ENGLISH MUFFIN.
  3. SPREAD AVOCADO ON EACH SIDE OF THE MUFFIN AND TOP WITH A SPRINKLING OF SHAVED PARMESAN AND BACON.
  4. NOW THAT YOU HAVE YOUR BASE READY, BEGIN FRYING THE EGGS. POACHED EGGS ARE A GREAT OPTION FOR THIS RECIPE AS WELL.
  5. ADD COOKED EGGS TO MUFFIN BASE. SALT + PEPPER TO TASTE.
