OUR DAY AT THE FARMER’S MARKET + LUNCH RECIPES


Today was farmer’s market day in a small beach community nearby called Seaside.  They have everything from local honey and fresh produce to handmade soaps and jewelry.  I love going to the farmer’s market when I get the chance and today I was on the hunt for feta but not just any feta, Greek marinated feta!

After the market, we stopped by Central Square Records to say hello to friends and check out the new merchandise.  I ended up with “The Skeleton Dance” record, an old Disney favorite around Halloween and Jamie got one of their tie-dye t-shirts.

By the time we got home we were starved!  I managed to whip up some quick chicken salad sandwiches and a side of Greek salad with the feta we bought that day.

The Chicken Salad recipe below is super simple and easy to throw together.  It’s definitely a staple in our household during the summer.  

 

SIMPLE CHICKEN SALAD

Ingredients

  • 2-4 CHICKEN BREASTS
  • 2-3 SCALLIONS, DICED
  • 2-3 CELERY STICKS, DICED
  • 1/2 CUP MAYONNAISE
  • BLACK PEPPER CORNS
  • SALT + PEPPER TO TASTE

Instructions

  1. PLACE CHICKEN BREASTS IN A STOCK PAN AND COVER WITH WATER

  2. ADD SALT AND PEPPERCORNS

  3. BOIL ON HIGH FOR 30 MINUTES

  4. ONCE CHICKEN IS COOKED, PLACE THEM IN A KITCHEN AID WITH THE PADDLE ATTACHMENT AND SHRED

  5. MIX THE REST OF THE INGREDIENTS WITH THE SHREDDED CHICKEN

  6. ADD SALT + PEPPER TO TASTE

The Greek salad dressing was a tip I got from the owner’s of the Greek gyro stand at the Farmer’s Market.  I would have loved to have added some kalamata olives to it but unfortunately, we were all out.  The chips you see pictured are the “Heritage Blend” by Terra brand.  They offer tons of tasty vegetable chip options, if you haven’t tried them yet, you should pick some up the next time you’re at the grocery store.  (My favorite is the salty plantain.)

 

GREEK SALAD

Ingredients

  • ROMAINE LETTUCE, ROUGHLY CHOPPED
  • 1 TOMATO, DICED
  • 1/4 CUP RED ONION, DICED
  • GREEK MARINATED FETA OR CRUMBLED FETA
  • LEMON JUICE
  • OLIVE OIL
  • OREGANO
  • SALT + PEPPER TO TASTE

Instructions

  1. ADD MARINATED FETA, TOMATOES, AND ONION TO ROMAINE LETTUCE

  2. DRIZZLE WITH OLIVE OIL AND LEMON JUICE

  3. ADD OREGANO, SALT + PEPPER TO TASTE
