A DAY TRIP TO THE FARMER’S MARKET + CHICKEN SALAD SANDWICH

AND GREEK SIDE SALAD RECIPES


Today was farmer’s market day in a small beach community nearby called Seaside.  They have everything from local honey and fresh produce to handmade soaps and jewelry.  I love going to the farmer’s market when I get the chance and today I was on the hunt for feta but not just any feta, Greek marinated feta!

After the market, we stopped by Central Square Records to say hello to friends and check out the new merchandise.  I ended up with “The Skeleton Dance” record, an old Disney favorite around Halloween and Jamie got one of their tie-dye t-shirts.

By the time we got home we were starved!  I managed to whip up some quick chicken salad sandwiches and a side of Greek salad with the feta we got.

The Chicken Salad recipe below is super simple and easy to throw together.  It’s definitely a staple in our household during the summer.  The Greek salad dressing was a tip I got from the owner’s of the Greek gyro stand at the Farmer’s Market.  I would have loved to have added some kalamata olives to it but unfortunately, we were all out.  The chips you see pictured are the “Heritage Blend” by Terra brand.  They offer tons of tasty vegetable chip options, if you haven’t tried them yet, you should pick some up the next time you’re at the grocery store.  (My favorite is the salty plantain.)

CHICKEN SALAD SANDWICH + SIDE GREEK SALAD

Ingredients
  1. CHICKEN SALAD
  2. 2-4 CHICKEN BREASTS, BOILED AND SHREDDED
  3. 2-3 SCALLIONS, DICED
  4. 2-3 CELERY STICKS, DICED
  5. 1/2 CUP MAYONNAISE
  6. SALT + PEPPER TO TASTE
  7. LETTUCE
  8. FRENCH HAMBURGER BUN, OR SLICED BREAD
  9. SLICED PROVOLONE CHEESE
  10. GREEK SALAD
  11. ROMAINE LETTUCE, CHOPPED
  12. 1 TOMATO, DICED
  13. 1/4 CUP RED ONION, DICED
  14. GREEK MARINATED FETA OR CRUMBLED FETA
  15. LEMON JUICE
  16. OLIVE OIL
  17. OREGANO
  18. SALT + PEPPER
Instructions
  1. CHICKEN SALAD
  2. MIX ALL INGREDIENTS IN A BOWL. ADD MORE MAYONNAISE IF NEEDED. I LIKE TO START OFF ADDING A LITTLE AT A TIME TO GET TO THE PERFECT CONSISTENCY. TOAST BREAD AND ADD A LITTLE MAYONNAISE ON EACH SIDE. TOP WITH LETTUCE AND PROVOLONE CHEESE. TOP WITH CHICKEN SALAD.
  3. GREEK SALAD
  4. ADD MARINATED FETA, TOMATOES, AND ONION TO ROMAINE LETTUCE. DRIZZLE WITH OLIVE OIL AND LEMON JUICE. ADD SALT, PEPPER, AND OREGANO TO TASTE.
Notes
  1. IF YOU HAVE A KITCHEN AID MIXER, THROW THE BOILED CHICKEN BREASTS IN WITH A BEATER PADDLE FOR ABOUT A MINUTE OR TWO ON MEDIUM SPEED. THE CHICKEN WILL BEGIN TO SHRED (NO MORE WAITING FOR IT TO COOL). WATCH CLOSELY AS YOU ARE DOING THIS BECAUSE IT CAN QUICKLY BEAT YOUR CHICKEN INTO A PULP!

That said, I stopped by @target on my way home to pick some up (plus a bag of Pumpkins for me) and whipped up this super simple Dark Chocolate Candy Corn Bark (recipe below). To add some extra holiday spirit, I placed them in cute goodie bags with a little tag that says "This is for you, Boo!" Can't wait to hand these out and keep the tradition going! (1) 10-15 of Brach's Candy Corn
Sprinkles of Your Choice
(1) Cookie Sheet Covered with Parchment Paper

After the chocolate has been melted, carefully spread the warm chocolate out on the pan and smooth over into one layer.  Add candy corn/sprinkles and allow to cool in the fridge.  Once cooled, break the chocolate apart into large chunks/shards and disperse as you please.
