WITH MANGO, TUMERIC, AND HONEY


I’ve recently been turned onto this smoothie kick and because it’s been such a hot summer I thought I’d combine two of my favorite methods to cool down into one!

Eating healthy isn’t always fun in fact, sometimes it’s just out right boring.  If I mention smoothie to my husband he automatically says no thanks but if I say “Do you want a popsicle?” and his ears perk up like our dog, Cami.  Today I’m going to show you a great way to camouflage a healthy recipe for the summer using fresh ingredients.  Looking for a popsicle mold like mine?  I’ve got you covered, just click here.

TUMERIC MANGO SMOOTHIE POPS

Ingredients
  1. 2 CUPS MANGO CHUNKS (FROZEN OR FRESH)
  2. 1 CUP PINEAPPLE CHUNKS (FROZEN OR FRESH)
  3. 1/2 BANANA
  4. 1 CUP COCONUT MILK (UNSWEETENED)
  5. 1/2 TSP. TUMERIC
  6. 1 TBS. HONEY
Instructions
  1. ADD ALL INGREDIENTS INTO A FOOD PROCESSOR AND BLEND UNTIL SMOOTH. POUR SMOOTHIE MIX INTO A LIQUID MEASURING CUP AND CAREFULLY POUR INTO POPSICLE MOLD. TAP THE MOLD ON THE COUNTER TO MAKE SURE THAT THERE ARE NO LARGE AIR POCKETS AND THAT THE MOLD IS FULL. PLACE IN FREEZER FOR AN HOUR OR SO.

  1. TO SAVE YOURSELF TIME, YOU CAN PURCHASE FROZEN FRUIT CHUNKS AT YOUR LOCAL GROCERY STORE.

Not a big fan of mango? No problem, there are tons of recipes and drinks that can be turned into popsicles.  The possibilities are endless just use a little imagination!

  • Every year for as long as I can remember, my family has celebrated the fall season by bringing home a bag of @brachscandy Autumn Mix. #sponsored This year, I thought it might be nice to share the tradition with friends by making them a spooky sweet treat because it's not Halloween without Brach's candy corn. That said, I stopped by @target on my way home to pick some up (plus a bag of Pumpkins for me) and whipped up this super simple Dark Chocolate Candy Corn Bark (recipe below). To add some extra holiday spirit, I placed them in cute goodie bags with a little tag that says "This is for you, Boo!" Can't wait to hand these out and keep the tradition going! Happy Haunting, friends! (1) 12oz. Bag of Dark Chocolate Chunks (melted)
(1) 10-15 of Brach's Candy Corn
Sprinkles of Your Choice
(1) Cookie Sheet Covered with Parchment Paper

After the chocolate has been melted, carefully spread the warm chocolate out on the pan and smooth over into one layer.  Add candy corn/sprinkles and allow to cool in the fridge.  Once cooled, break the chocolate apart into large chunks/shards and disperse as you please.

  • Most of the time my days off consist of me running errands, cleaning and working on stuff for the blog, not to mention, all the other things that come up in life.
