SIMPLE CHICKEN SALAD

Ingredients

  • 2-4 CHICKEN BREASTS
  • 2-3 SCALLIONS, DICED
  • 2-3 CELERY STICKS, DICED
  • 1/2 CUP MAYONNAISE
  • BLACK PEPPER CORNS
  • SALT + PEPPER TO TASTE

Instructions

  1. PLACE CHICKEN BREASTS IN A STOCK PAN AND COVER WITH WATER

  2. ADD SALT AND PEPPERCORNS

  3. BOIL ON HIGH FOR 30 MINUTES

  4. ONCE CHICKEN IS COOKED, PLACE THEM IN A KITCHEN AID WITH THE PADDLE ATTACHMENT AND SHRED

  5. MIX THE REST OF THE INGREDIENTS WITH THE SHREDDED CHICKEN

  6. ADD SALT + PEPPER TO TASTE
